From the Brassica family of vegetables, Kale is a leafy green that occasionally dresses up with a touch of purple.
Her deep green complexion reflects her wealth of chlorophyll, providing us with abundant energy. Chlorophyll increases the number of red blood cells in our body to help deliver oxygen to cells. More oxygen leads to greater nutrient absorption. And greater nutrient absorption means more energy to bike to work and leave the car at home.
The bitter flavour of kale helps ignite our digestive system, firing up the digestive juices to help us break down and absorb the delicious foods we eat. Kale is packed with nutrients - vitamin C to top up our immune system, B vitamins to nourish our adrenals, calcium to strengthen our bones, sulphur to help our body detoxify, and antioxidants to prevent oxidative stress.
So, now that you’re convinced kale deserves the spotlight - and no longer serve as a garnish – cast her in your breakfast, lunch and dinner. Chop and toss in your mixed greens salad (massage her leaves with your favourite oil before chopping). Lightly steam and add to a grain bowl, soup, stew, curry, or pasta dish. Or blend with some other celebrity super foods in a smoothie.
