Cheerful cherries are worth cherishing in this raw pudding. It’s filled with brazil nuts, cherries and avocados. These three powerhouse foods will fuel you with antioxidants, vitamins A, C, E, & K, potassium, magnesium, calcium and folic acid. This is hands-down a favourite dessert after a day of adventuring outside.
Serves two
Ingredients
Fresh, raw and organic ingredients are best!
¼ cup raw Brazil nuts soaked in water 4-12 hours and drained before using
½ avocado
4-6 pitted medjool dates, the fresher and juicier the better (about 1/2 cup)
1 cup cherries (fresh or frozen work well)
Method
1. Blend all ingredients in a food processor until creamy. You may need to add a wee bit more liquid. You could use water or natural fruit juice or coconut water.
2. Chill until ready to serve.
3. Top with a cherry, crushed brazil nuts or raw cacao nibs.
Brazil nuts go rancid easily so try to find the freshest ones you can.
