Ever try the classic 80's side dish called ambrosia salad? It seems to emerge in the grocery store deli around the holidays and I guiltily admit that I used to LOVE it. You know, as a kid, right? *blush*
Here it is in a nutshell: pineapple, mandarin orange, coconut (sound's healthy so far, right?) and *ahem* mini marshmallows (eeek!). Oh ya, and sometimes whip cream or sour cream.
Before you close your browser, read on. My revamped and blended version is actually pretty darn good for you, not to mention delicious. I simply subbed in a thick healthy yogurt full of probiotics in place of marshmallows, and coconut milk for the cream. You could even get hard-core and use plain kefir instead of yogurt to up the probiotic count and bring down the sugar. You definitely won't find this version in your mom's old Best of Bridge.
Ingredients
The 80's are long-gone, go organic.
3/4 cup chopped pineapple
1 peeled mandarin orange
1/2 cup vanilla mediterranian or greek yogurt (or vegan substitute)
1 Tbsp orange juice
1 tsp shredded unsweetened coconut
Blend until creamy smooth. Mmmmm - frothy fare that's indeed fit for Greek Gods.
