Ditch the dairy and use rich and creamy full-fat coconut milk instead. It’s heart-healthy, great for your skin and lactose-free = highly digestible.
Ripe red strawberries are full of antioxidants and vitamins and
refreshing mint not only has your taste buds doing a double take, it aids in the digestion and absorption of the bounty of nutrients you’re swallowing.
Kids LOVE to sip on this recipe and it makes for a great popsicle too.
Ingredients
Go organic! Makes one serving.
1 cup of full-fat coconut milk (from a can)
2 – 3 large soft dates
4 – 5 large fresh mint leaves
Blend until smooth and add a touch more coconut water if your shake turns out too thick. But really, is there such a thing?
