If you need an excuse to start your day with chocolate this is it.
While many people go all starry-eyed for Nutella, the high amount of sugar and preservatives, doesn’t really render it ideal for the first meal of the day. But making your own at home version is simple and easy (even if you don’t have a crazy powered blender) and allows you to add in powerhouse superfoods like raw cacao (a serious source of magnesium) to really up the nutrition, along with all the healthy fats of freshly roasted nuts.
Pair with seasonal berries and fresh mint for a seriously decadent morning treat.
Breakfast Chocolate & Berry Toasts
1 cup almonds
1 cup hazelnuts
1 Tbsp coconut sugar
2 Tbsp raw cacao or cocoa powder
pinch of sea salt
1 baguette, sliced
Chocolate Hazelnut spread
Local, seasonal berries
Mint
Method
1. Preheat oven to 325F. On two separate baking sheets place nuts in a single layer. Roast for 10-12 minutes, or until fragrant. Allow to cool slightly.
2. Transfer hazelnuts to clean tea towel (try to keep nuts to one half). Fold remaining half over and rub nuts to remove skins.
3. Transfer skinned hazelnuts, almonds, coconut sugar, cacao, and salt to the bowl of a blender or a food processor. Blend until nuts have released their oil and are smooth and creamy. This can take anywhere from 3 minutes to 15 depending on the power of your blender/food processor.
4. Slice baguette. Spread each slice with a dollop of chocolate hazelnut spread. Top with berries and mint.
