Who knew that DIY could apply to your condiments? Well, if you want to veganize your mayonnaise, this is the recipe you’ve been looking for.
Gigi Cohen shares her personal recipe for vegan mayonnaise, a velvety concoction that has the customers of her Montreal-based Café Juicy Lotus coming back for more. You’ll need a food processor, raw cashews, coconut milk, organic coconut oil, turmeric, sea salt, apple cider vinegar, olive oil and Gigi’s secret for making it super creamy.
This mayonnaise is so tasty you can slather it on your veggie burger, your sandwich, toss it into your salad or serve it up as a dip with crudite! No matter how you dish it, you’ll have fans (yes, even the carnivores) raving and craving it for weeks.
Gigi says you’ll fool your carnivore friends with this veganized substitution for traditional homemade mayonnaise. So – did it work for you? Tell us what you (and your friends) think of this condiment creation. Leave us a video link or comment below, give us a ‘like’ (we’ll take it as a lick) and, like all good food, be sure to share this with friends.
Thanks to Gigi and the gang at Lotus Cafe for showing us to the creamy truth! You make raw and vegan undeniably delicious. Looking for more of Gigi’s creations and can’t pop in to her cafe in Montreal? Check out her cookbook Nourishing Friends for more healthy and tasty dishes.
