The summer heat often has us patio-bound forfavourite summer drinksand trekking to the corner store for scoops of gelato.
Notthat we have anything against summer patios or warm evening walks to ice cream shops (those are some of the best parts of summer!). But know this: often when were craving something sweet, were actually just really thirsty.
Not only that but your average ice cream is full of salt (counter-intuitive right?) and will only make you thirstier. Alcohol too works againsthydrating youand acts as a diuretic in your body.
So, before trying to quench your thirst (or your sweet tooth) with those types of goodies, drink some of that good ol H20. I know, thats boring advice.
But the second thing to do is try this salad. Its chock full of veggies (and fruit!) that are full of water,electrolytesand other nutrients that are anything but boring.

Method
1.Add the first 5 ingredients in a mason jar with a screw top lid and shake well to combine.
2.In a medium bowl combine all of the prepped veggies (celery, fennel, apple and radish) toss to combine evenly.
3.When youre ready to serve, drizzle the dressing over veggies and season to taste with salt and pepper. Top with some chopped mint and serve!
