Tweaked from any breakfast pasta I’ve come across so far
I’ve been lovin’ the idea of breakfast pasta lately – especially after a fabulous new Italian joint opened around the corner from me, serving up pasta for every meal of the day.
This version is much lighter with no starch or butter or bacon to be found…although that could be arranged. And maybe it will, in a follow-up Tweak & Eat breakfast pasta recipe!
Side note: I’m borderline obsessed with finding fun & tasty ways to infuse veggies into different, sometimes unexpected, parts of the day these days. So expect more of where this came from.
Ingredients
1 cucumber, spiralized (or peeled into ribbons using a veggie peeler)
Juice of ½ -1 lime
~6 large basil leaves, julienned into ribbons
Handful of berries (we used blackberries)
Kiwi fruit, diced
1 Tbsp black sesame seeds (and/or poppy seeds)
Sprinkle of bee pollen (optional)
Sprinkle of coconut (optional)
Method
1. Toss your spiralized or ribboned cuke together with julienned basil in a bowl. Squeeze your lime on top and toss again, then load the mix onto a plate (or into a bowl).
2. Sprinkle on your black sesame seeds then top with a little more basil, kiwi fruit and blackberries (which I halved) and then follow with your other chosen superfood toppings. (We went bee pollen and coconut.)
3. Serve and enjoy!
