So drink up! The sweetness of pairs well with the tart and tangy flavour profile of the grapefruit. And because grapefruit tends to be a little sweeter than the traditional lemon juice used in the old Collins, you need less sweetener to balance it out. Healthier Grapefruit Collins
2 oz, fresh-squeezed pink grapefruit juice
¼ oz, fresh-squeezed lemon juice
1 tsp raw organic honey, or more to taste
1 oz good quality gin
4 oz soda water
Combine the grapefruit juice, lemon juice, and honey in a small bowl and whisk until well combined.
Strain the juice into a tall glass filled with ice. Pour in the gin and stir thoroughly. Top with soda water; garnish with a quarter slice of grapefruit and, if youre feeling naughty, a maraschino cherry.
