Don’t you just hate it when you peek into your beloved box of “Christmas oranges” only to find there’s a few rogue green shrivelled-up fuzzy ones at the bottom? Or worse, they’re in the middle of the lot, spreading green mould to the rest of the good ones. Whyyyy?!
One theory might be that your rate of mandarin consumption has plateaued and even declined hence you’re not eating them fast enough. If that’s the case the best way to get rid of surviving oranges in a hurry is to blend ’em.
All that orange vitamin C, potassium and fibre combined with good chlorophyll-y greens and some healthy miracle-working coconutty fats will serve as a fantastic palate re-set so you can get back to O.D.’ing on gingerbread lattes and eggnog.
And mandarins, of course.
Ingredients
Organic, of course.
- 2 small/medium mandarin oranges (make sure there are no seeds in there)
- Handful of spinach
- Juice from 1 lime wedge
- ¾ cup coconut milk beverage
- 1 tsp coconut oil
- ¼ tsp fresh grated ginger
- 1 tsp honey (optional – only if you don’t find it sweet enough to make you smile)
Blend until smooth and enjoy a refreshing break from all things eggnog and gingerbread. It’ll make those seasonal flavours taste that much better.
