Sometimes the simplest combinations are the tastiest. Especially when you're able to use fresh-picked ingredients.
I just went on a strawberry picking frenzy in Pemberton, BC and came home with 20lbs of the delicious red morsels. I blended some up with beet tops right out of the garden and the result couldn't have been tastier or more nutritious.
Beet greens are sky-high in vitamins K, A and C and actually have a higher iron content than spinach, not to mention higher nutritional value than the beetroot itself. They're an excellent source of carotenoids, flavonoid anti-oxidants, and folate (strawberries are too!) – plus they contain these compounds in greater abundance than those in the roots.
Ingredients
Go organic.
1 1/2 cups of fresh or frozen strawberries
3-4 big beet tops
1 Tbsp hemp hearts
1/2 to 1 cup of filtered water (or more if needed)
a dab of honey is optional
Blend until smooth, then drink down the delight of this sweet and simple snack.
