If your CSA box has delivered you a giant, bulbous, turnip-like root that you can neither identify nor have a clue what to do with – it’s likely a jicama – and this radish/jicama ensemble is just the thing.
Jicama (pronounced hee-kuh-muh) – is a sweet root vegetable, whose flavour and crunchy, juicy texture is astonishingly apple-like. Packing a plethora of vitamins and minerals – particularly vitamin C – this root will even improve your digestion with its high count of prebiotic inulin fibers.

Method
1. Mix the first 5 ingredients (olive oil, honey, apple cider vinegar, lime juice, zest of lime) together to make the dressing
2. Toss radishes, oranges, jicama and dressing together, coating everything evenly. Garnish with cilantro and toasted almonds, add salt and pepper to taste.
