If you think “chia” sounds like the name of a certain green ‘pet’ you had in the 80’s – you’d be right. This tapioca-esque pudding is made with the same seeds that grew into the green Mohawk on your Chia Pet.
Since then – like neon – those little seeds have made a big comeback. This time though, they’re deservedly being touted as a “superfood” – packed with antioxidants, fibre, protein, omega-3 fatty acids, and tons of minerals. They turn a bit gelatinous when combined with liquids and therefore create the perfect, healthy pudding so you can ch ch ch chow down!
Leftover tip: Pack leftovers for a tasty, healthy breakfast. Try adding some banana slices and toasted coconut.

Method
1. Pour chia seeds into a large bowl.
2. Combine the next 5 ingredients (water, medjool dates, vanilla extract, and cardamom) in a blender. Blend until really smooth and add to the bowl of chia.
3. Stir to combine and let the mixture sit on the counter or in the fridge for about 15 minutes until thick. Add fresh berries (and maybe a little dollop of greek yogurt!) and serve!
