Sippin’ a fresh mojito can make you feel like you are dippin’ your toes in Cuban waters. Even if our Canadian weather is less than Fiesta material, let this cocktail sweep you away.
Invigorating spearmint will have your taste buds tingling and your energy levels soaring. (Who needs coffee?!) Complimented with fresh mint (organic of course), your senses are sure to be satisfied.
Our version is slightly darker than a usual mojito, because of the delicious spearmint tea. It also lacks the refined sugar you’d find in the original… That’s our kind o’ cocktail!
Ingredients
Choose organic when possible!
Brew your tea and chill it in the fridge. Muddle the mint leaves with the lime juice and honey syrup. Add chilled tea and sparling water. Pour into a cocktail glass with ice and 1 ounce of white rum, and garnish with a lime wedge.
Sip and repeat: “I’m on a beach!”
Honey Syrup
Bring water to a boil in a small saucepan, and add the honey. Reduce heat and simmer until the honey and water are well blended. Chill this mixture and use it to sweeten up your cocktails sans sugar! Feel free to substitute honey with maple syrup if you wish.
Editor's note: Thanks to David's Tea for hooking us up with the tea used to create this invigorating cocktail.
