I hope I’m not alone in my constant fruit cravings throughout the summer. Although known as the more “sugary” produce option (compared to veggies), more fruit in the summer does make seasonal sense.
Fruit is full of water and usually a lot of another thing that’s helpful in the summer: electrolytes. We lose more electrolytes sweating during the hot months and it’s harder and even more important to stay hydrated. So eat up those fresh summer fruits y’all like!
To help with that, we came up with three salads you can make to satisfy your fruit craving and fill your H20 + electrolyte quota.
Watermelon Feta & Mint
Fresh watermelon cubed into bite-size chunks
Goat feta cheese
Poppy seeds or pumpkin seeds
Fresh mint leaves, torn up (I ran out for the picture!)
Avocado oil (or olive oil)
Sea salt and pepper
Method:
Toss all salad components together in a medium bowl (ratios are up to you!) and serve right away.
Grilled Peach & Prosciutto
Juicy peaches sliced into disks
Sliced buffalo mozzarella
Thin slices of prosciutto
Fresh basil leaves
Organic, extra virgin olive oil
Ground pepper
Method:
Grill peach slices over the BBQ until grill marks appear and peaches are nice and caramel-y. Arrange grilled peaches, prosciutto, fresh mozzarella slices and basil leaves on a platter or plate. Drizzle with olive oil and finish with cracked pepper.
Orange Balsamic and Beet Salad
Large navel orange, skin removed and sliced into rounds
Boiled & cooled beets sliced into rounds (must be soft and easy to slice through)
Fresh cilantro leaves, stems removed
Pistachios
Balsamic glaze
Method:
Stack orange and beet rounds in an alternating tower, sprinkle cilantro leaves and pistachios on top and finish with a drizzle of balsamic glaze.
